These colorful corn ears are hanging in a farmer's market, where they display the wide range of Indian corn hues.
Indian corn (Zea mays indurata) is also known as Flint corn or sometimes calico corn, is a variant of maize. Because each kernel has a hard outer layer to protect the soft endosperm, it is likened to being hard as flint. Because flint corn is so colorful and durable, it's often used for decorating at harvest and Thanksgiving time. Because flint corn has a very low water content it is more resistant to freezing than other vegetables. It was the only Vermont crop to survive New England's infamous "Year Without a Summer" of 1816.
